Description

This Laguiole olive wood folding knife pairs olive wood with matte steel bolsters and a Sandvik steel blade. Laguiole en Aubrac handcrafts it in France.

The olive wood is pale and warm, with darker streaks running along the grain. Matte bolsters keep the look soft and practical. Open it and the classic slim Laguiole blade comes into view.

The blade is 12C27 Sandvik stainless steel, which the maker says avoids corrosion. It measures 4 inches (10 cm), or 4.75 inches (12 cm) from bolster to tip. The spring is polished on the inside and forged as one piece with its bee. The bolsters are matte stainless steel. It includes a certificate of authenticity. It is made in the village of Espalion, in the historic Laguiole area of France.

A folding knife like this belongs in a picnic basket or beside a cheese board. It also fits a coat pocket on a walk. You will use it for bread, fruit and sausage far more than you expect.
